Strawberry Salad with Honey and Balsamic Vinaigrette

6 to 8 servings 

Ingredients for Salad

1 can mandarin oranges, drained
1 cup sliced fresh strawberries
1/2 small red onion, sliced
1/2 cup toasted sliced almonds
4 ounces bleu cheese, crumbled
1 avocado, peeled, pitted and sliced
5 cups mixed greens
2 cups cut-up roasted chicken, optional 

Ingredients for Vinaigrette

1/2 cup balsamic vinegar
3 tablespoons honey
2 tablespoons olive oil
3 tablespoons Dijon mustard
1 teaspoon coarsely ground black pepper
2 cloves garlic, minced


  1. Mix oranges, strawberries and onion in a large salad bowl. Refrigerate while preparing dressing.
  2. Put ingredients for vinaigrette into a container and shake to mix. Chill.
  3. When ready to serve, toss salad with dressing in a large bowl. Put a bed of mixed greens on individual salad plates, and divide strawberry mixture over greens. Sprinkle almonds, bleu cheese and avocado in a spiral design over top.
    • Note: If you don’t use the avocado you will save 4g of fat and 50 calories per person.
