Insalata Mediterranean

4 servings


2 cups water
1 cups uncooked long-grain rice
1/4 cup fresh lemon juice
2 tablespoons olive oil
1/4 cup chopped green onions
1 tablespoon grated lemon zest
2 tablespoons capers
1 cup diced red pepper
1 cup chopped tomatoes, grape or cherry tomatoes
1/4 cup olives
2 (6 oz.) cans albacore tuna, drained


  1. Bring water to a boil in a medium saucepan, add rice. Cover, reduce heat and simmer 15 minutes or until liquid is absorbed. Remove from heat, let stand for five minutes. Fluff with a fork, cool.
  2. Combine lemon juice, oil, onions, zest and capers in a large bowl; stir well. Stir in rice, bell peppers, olives and tuna. Cover and chill.
