Caramelized Onion Pizza

Yields 6 servings

Ingredients for onions

2 to 3 large sweet onions
1 teaspoon olive oil
1/4 tablespoon salt
Freshly ground black pepper
1/8 teaspoon chopped garlic (optional)
1/8 teaspoon dried rosemary (optional)
1/4 cup dry red wine (merlot or cabernet sauvignon)

Ingredients for pizza

Pre-made pizza dough
1/2 teaspoon olive oil
1/8 teaspoon chopped garlic
1 1/2 tablespoons parmesan cheese
1 1/2 tablespoons gorgonzola or bleu cheese
1/2 cup caramelized onions
1 tablespoon scallions
Pinch of fresh rosemary


Onions: Slice onions approximately 1/4" thick. Heat olive oil in heavy   skillet (preferably an iron skillet). Add onions, coating them well with oil. Cook on low heat for about 30 to 45 minutes, until onions begin to color. Increase heat to medium and cook for another 15 to 20 minutes. Add garlic and rosemary, if desired. Increase heat to high and add wine, reduce until wine evaporates. Makes 1 1/2 cups.

Pizza: Preheat oven to 500°. Shape dough ball into 9" circle or square on a lightly floured work surface. Spread olive oil and garlic on crust. Sprinkle parmesan on crust, then onions, then bleu cheese on top of onions and add a pinch of rosemary. Sprinkle scallions on last. Bake pizza on pizza stone for 8 to 10 minutes or until golden brown.
