1 1/2 cups hot water
2 tablespoons instant espresso
4 tablespoons Kahlua® coffee-flavored liqueur, divided
1 (8 oz) package fat-free cream cheese
1/2 cup mascarpone cheese
1/3 cup packed brown sugar
1/4 cup sugar
1 (2 to 3 oz) package ladyfingers (24)
2 teaspoons unsweetened cocoa, divided
- Combine hot water, instant espresso and 2 tablespoons of liqueur. Stir well, and let cool.
- Combine cheeses in a large bowl. Beat with a mixer at high speed until smooth. Add remaining 2 tablespoons of liqueur and both sugars. Beat until well blended.
- Split ladyfingers in half lengthwise. Brush espresso mixture on the flat sides. Place half of the ladyfingers in the bottom of an 8" square baking dish, slightly overlapping them. Spread half of the cheese mixture on top and sprinkle with 1 teaspoon of cocoa. Repeat layering with remaining ladyfingers, cheese mixture and cocoa.
- Cover and refrigerate for 2 hours or more.
